The Claw and the Grip

Most kitchen cuts come from a loose grip and exposed fingertips. Pinch the blade with your knife hand, curl the other into a claw, and the knife has nothing soft to find.

A confident hold starts at the blade, not the handle. Pinch the base of the blade between thumb and forefinger and wrap the rest of your fingers around the handle.

The guiding hand does the rest. Curl your fingertips under so your knuckles face the blade, and let the flat side of the knife ride against those knuckles as you cut.

Together they turn cutting from a nervous act into a repeatable one. You are not relying on luck to keep your fingers; the knife physically cannot reach them.

Pinch the blade, not just the handle

Grip where the blade meets the handle, thumb on one side and the side of your forefinger on the other. This front grip steadies the tip and lets the knife follow your hand exactly.

Make a claw with the other hand

Curl your fingertips under and push down with the pads, knuckles forward. Rest the blade against your knuckles so it slides down and past your tucked fingers, never toward them.

Cut down and away from your body

Keep the motion moving away from you, not toward your palm or your torso, and let go of speed. Smooth and deliberate beats fast every time you still have all ten fingers.

Speed is a byproduct of a safe grip, never a substitute for one.
